BBQ Chicken Casserole

Today I thought I’d share one of my favorite recipes. I haven’t made it in years until the past couple of weeks. I’ve made it twice. 😉 It’s very simple to make and very delicious!

BBQ Chicken Casserole

2 Chicken breasts

1 pound (16 oz) of noodles

half a bag of frozen corn

large bottle of bbq sauce

an assortment of cheese (I used cheddar, swiss, and mozzarella)

Preheat the oven to 350.

Heat the water to boiling and cook noodles per instructions.

Dice up the chicken into tiny pieces and cook in a frying pan.

Pour entire bottle of bbq sauce in a pot.  Add corn.  Heat.

When chicken is cooked, add to the bbq sauce/corn mixture.

When the noodles are cooked, drain.

In a 2 qt casserole dish, layer noodles – bbq sause/corn/chicken mixture – cheese all the way to the top (about 3 or 4 times).

Cover and bake in oven for 30 minutes, serve, and eat!
