For those of you who don’t know, I’m a bit of a foodie. I love all kinds of different food and I love trying new things. I enjoy cooking and baking, though not as much as I used to. Last night, I had the urge to do something different with chicken. Instead of sifting through my endless cookbooks like I should have, I turned to the internet and found a gem. I liked how it sounded, and then made it my own. This is what I did.
1 can cream of mushroom soup (can also use cream of broccoli)
1 pkg of crackers (or you can use breadcrumbs)
1/2 cup milk
2 tsp parsley
2 large chicken breasts
Preheat the oven to 350 degrees. Mix the cream of mushroom soup, milk, and parsley. Turn crackers into crumbs (or use bread crumbs). Coat the chicken in the soup mixture, then cover in crumbs and put in a lightly greased baking dish. Bake in the oven for 45 minutes or until lightly golden brown. Heat remaining soup mix and top the chicken with it once it is out of the oven.
Let me tell you, it was delicious! Both my boyfriend and myself went back for seconds! So, if you’re looking for a little something different, try this out! Oh, and for those of you wondering, I served some mixed vegetables as a side. 🙂

In other news, I’ve been staying indoors a lot because my allergies are at an all time high. I can’t believe how bad the allergens are this year! Unreal! Itchy and watery eyes, itchy all over, coughing… no bueno. So, on that note, I’m going to take my next dose of benadryl. Hope you enjoy this recipe and there will probably be more to come!
